butterfly pasta with kale

Since moving in to our new house there has been a huge shift towards home cooked meals. I'll admit it, in NYC we were hooked on delivery, take out, and eating out. Even though I love to cook, I was worried that preparing three meals a day, every day, would overwhelm me, but I haven't been doing so badly! Having a car is helpful for stocking up on groceries, so I can shop on the weekend and actually have enough ingredients on hand to get me through the week. I have prepared a lot of old favorites, and have also had fun trying out new recipes.

One of the biggest hits, which was also one of the easiest things to prepare, was this Butterfly Pasta With Kale, from The Family Dinner (which I picked up on sale the other day at Anthropologie). The only adaptation I made was using canned whole tomatoes (chopped) instead of sundried tomatoes. It was delicious!
