Lunch Yum

I recently hit on a delicious combo of salad ingredients: a bowl full of mixed greens, thinly sliced red onion, one juicy-sweet navel orange (peeled and cut into chunks), a hand full of chopped-up black and green olives, a drizzle of olive oil, and a splash of balsamic vinegar.

The result is tangy and sweet, with a nice little kick thanks to the onion. What are your go-to salad ingredients?

    The ladies enjoyed my New Year's Eve indulgence of mixed greens,
    walnuts, golden raisins, dried cranberries, mandarin slices, avocado, red onion, dressed with walnut oil & a splash of plum vinegar.
    Made a yummy dessert!!

  3. that sounds wonderful! my mom makes this delicious rice wine vinegar dressing that makes all salads delicicious.

    she also makes a to-die-for mango and tomato salad. more of a summer salad, but yummy nonetheless.

  4. We have the same salad nearly every night .. mixed greens, golden raisins, a bit of feta, almonds or soynuts, tomato, and balsamic vinegar. We actually have a whole bag of mandarins at home ... will have to try your salad!

  7. Mmm I could do this. I would take out the olives- I'm more of a Kalamata fan but not big on all olives. My go-to ingredients are pears, gorgonzola cheese, & garbanzo beans, & soy nuts for crunch!

  11. my new favorite salad is kale sliced very thinly and massaged with olive oil. add to that dried cranberries, gorgonzola, apple and sunflower seeds and toss with annies oriental dressing - so good and i have finally figured out how to use kale!

    I love a mix of lettuce and arugula, with pecans, and either a splash of pumpkin seed oil and fig vinegar, or a good helping of my favorite lemon/garlic salad dressing that is easy to make.

    I also love a good salad of beans and quinoa or bulgur with lemon and garlic and parsley (are you sensing a theme?) or a mix of grapefruit wedges, other citrus, and avocado. Now I'm hungry!

  13. my fav go to salad any time of year (although particularly refreshing in summer when you can get juicy heirlooms) is avocado, cucumber, tomato, thin sliced red cabbage, cilantro & topped with olive oil, S&P and lemon or/lime juice.

  15. Sounds good! Citrus is the perfect addition for wintertime salads. I love salad. My regular salad ingredients include lettuce, tomato, avocado, olives. I always just dress the salad directly with salt, olive oil and red wine vinegar, sometimes balsamic too. Occasionally I make Greek salad which is wonderful. When I want to get fancier there's a salad I like with roasted beets, almonds, and asian pear. For a recent dinner party I made a salad with escarole, pomegranate seeds, apple, toasted hazelnuts and a very citrus-y dressing that everyone seemed to enjoy.

    Also love...apples, Havarti, Gouda, sauerkraut, sesame oil, salami, wild salmon, soaked almonds, currants...I could go on!

  17. Salad? What's that? Not a lot in the way of veggies or roughage in my diet lately, must IMPROVE in the New Year. Your salad sounds yummy - I tend to overstuff my salad with everything that sounds yummy but doesn't necessarily go with each other. I do love avocado and corn and black beans in my salad. I do love olives and I love soft cheese - but knowing when to put which ingredient is where I go wrong sometimes. i LOVE CocoTheForce's salads, always. Delicious!
