Yesterday afternoon, while it snowed outside, the Kiddo and I decided to fight off the cabin-fever-blues by baking a batch of applesauce muffins. It was really fun, and the results were way yummy!
Yum yum! Try this recipe too (there are no eggs, so baby can lick the batter--my baby sticks her whole head into the mixer, so watch out for that). This cake tastes so good, greater than the sum of its parts, and is so quick.
Mix half cup softened butter and 1 cup sugar a few minutes until pale and fluffy. Mix in 1 cup cold apple sauce. Mix in 2 cups flour, 1 tsp. baking soda, 1 tsp. cinnamon. Add half cup raisins and half cup walnuts. Pour into greased and floured 8 inch square pan or a round bundt pan. Bake at 350 for 40 minutes. Done!
